Recipe Review

This Winter Vegetable Risotto was probably the best vegan recipe I have ever made. Well . . my awesome husband made it for me but I was the taste tester and review writer 🙂. The creamy-savory-buttery-cheesy sauce is unlike any other vegan sauce I have ever tried. The starchy water from the rice cooking helped make the sauce creamy.

Honestly, this is also the first time I have had risotto so it might have helped that I wasn’t comparing the taste to an omnivore version. You really do end up venturing out and trying so many new things when learning to cook WFBP food. When eating meat and dairy, it is easy to just stick with with a few favourite recipes. After all, almost anything tastes good smothered in butter or cheese. However, when cooking plant based meals you have to be more intentional about adding flavor to your dishes so you inevitably end up trying something new. This was also my first time trying parsnips.
