How it all started

When I first watched the Forks Over Knives Documentary in September of 2014, it changed my life. Up until that point I had always seen meat and dairy as a necessity and  even as healthy food. Growing up, I was inundated with the “Three a day” slogan from the dairy industry and thought that a dinner was not complete unless it had meat. Even though I had heard that you should reduce red meat consumption, I still thought of steak as healthy because I had always been slightly anaemic and knew that it was a good source of iron.

At that point, my mom was reading another life changing book with the same philosophy “Eat to Live.” We both decided to go Whole Foods Plant Based (WFPB) with no oil for a week. Within that week I lost ten pound effortlessly when I had struggled and fought with my weight my whole life. My mom, a type two diabetic, was able to cut her insulin in HALF. In just a week. Amazing!

Unfortunately, I saw my short success with a plant based diet as a magic bullet. Something that I could do just for a week anytime I wanted to lose weight quickly. I basically thought I could eat whatever I wanted since I found an easy way to lose weight fast. On a positive note, I did forever change my mindset around meat and dairy. I would eat it as a seasoning or a treat and never looked at animal products as a healthy food again. 

The evolution of the project

At the end of 2014, I decided that I would cook through the entire Forks Over Knives Cookbook and started a website titled “Fresh and faithful” to review each recipe and share what I learned along the way. Due to financial reasons and the time commitment of raising five children, I did not renew that website after 2017. Now, in 2022, I created a new website to help people transition to a plant based diet. I will be uploading all of the past reviews and continuing the Forks Over Knives Cookbook Project. I will also be adding reviews of recipes from the Forks Over Knives App.
