Recipe Review

These vegan Strawberry Shortcakes with Vanilla Whip from the Forks over Knives Cookbook are the perfect treat to keep you on the WFPB path. It combines the creamy vanilla whip recipe and the shortcake recipe with fresh slices of sweet and tart strawberries.

For the scones, I made my own oat flour by blending almost 4 cups of oats to make the three cups of oat flour called for in this recipe. Unsweetened applesauce is also hard to come by here in the UK (It’s only available as overpriced baby food) so I blended two small apples instead. This was a quick and easy task in my Ninja blender and food processor.

For the vanilla whip, It was quick and easy to blend everything together. This really pulled together the soft crumbly shortcakes and the juicy strawberries. My kids absolutely loved this dessert and so did I. It was such a nice summer treat since the strawberries were in season.

Difficulty:  Medium, only because it was a lot of steps. I had to blend my own oat flour and applesauce. I also had to make the vanilla whip and slice strawberries. The effort was worth it though.

Did my kids like it? They LOVED it!

Will I make it again? YES!

This post is part of the Forks Over Knives Cookbook Project, an effort to post pictures and reviews of all 300+ recipes to help you decide which recipe is worth cooking. The cookbook only has a few photos so hopefully people find it helpful to see what the recipes look like once prepared.

 I also wouldn’t want anyone new to this way of eating to get discouraged by spending a lot of time and effort on recipes that don’t taste amazing, since WFPB food can definitely taste great. I apologise about the lack of a recipe included but I cannot post it for copyright reasons. However, many of their recipes can be found on their website or their app if you don’t have the cookbook.
