Introducing my family and I:

I am an Orthodox Christian, mother of six, and the wife of a priest. We home educate our children and we love learning together. Our family enjoys hiking, reading, and traveling. We are from the United States of America but we moved to England in 2021. After enjoying our time spent here in the UK, our family is now moving back to the US near the end of 2023.

I have been interested in cooking healthy vegan meals for my family ever since I watched Forks Over Knives in August 2014. I do not eat whole food plant based 100% of the time but I am continuing to strive towards that ideal and including more WFPB meals and snacks in our diet. That being said, all of the recipes featured on this site will be vegan. 

I am also interested in making vegan and oil-free meals because this is part of the fasting traditions in the Orthodox Church. We are to eat vegan almost every Monday, Wednesday, and Friday, 40 days before the Nativity, during Great Lent, etc. I hope this website will provide meal inspiration for those who those who are trying to fast but don’t know how to make food without oil or animal products.

Newly Plant Based’s goal to help you:

The main reason I created Newly Plant Based is to help you on your journey. It is geared towards anyone who is interested in starting on their path to eating plant-based, healthy, and nourishing food. I have been making WFPB meals since 2014 and want to share everything I have learned along the way.

I have decided to add vegan cookbook reviews to Newly Plant Based. This was done after noticing that many people new to this way of eating would like a go-to cookbook with compliant recipes to help them learn how to cook without animal products, processed foods, or oils. However you never know what you are going to get with a new cookbook:

  • Does the cookbook rely on processed substitutions or does it focus on whole foods?
  • Does it use expensive and/or hard to find ingredients?
  • Are the meals quick or are they labor intensive?
  • Does it taste good?

My plan is to cook, taste, and review four or five recipes from each cookbook. I will also look through the rest of the cookbook and post and overall review to answer these questions for you. My vision is to review enough cookbooks that Newly Plant Based will be to go-to place for comprehensive reviews of WFPB cookbooks so you don’t have to waste any money on a cookbook that is not suited to you.
