Recipe Review

This soup is light and refreshing, perfect for spring or fall when its cool enough to have some warm soup but when you’re not in the mood for something heavier like a stew. Simple and inexpensive, this Vietnamese soup is easy to accidentally under season. When I first tried it, I thought it was really bland. When I went back and looked at the recipe, I realized that I had only added the zest of a lime and forgot to add the juice. The addition of the lime juice really pulled it all together with the acidity it offered. Also don’t forget to add enough salt and pepper and use fresh cilantro since that is the only seasoning in this soup. Overall, I enjoyed the soup but it took a few bowls to fill me up.
