Recipe Review

Yes, this recipe is really simple. All you do is chop a bunch of vegetables and throw them into a pot to boil with some vegetable broth. However, this easy to make vegan soup is super bland. Especially if you use low sodium vegetable broth. The only way I was able to eat this is with lots of salt and pepper. It was really missing something. Maybe acidity, salt, seasonings, herbs?

Also, why on earth is it called singles soup?! The quantity it makes could feed a large family. Just look at the photo below. This is the largest pot I own and it was filled almost to the top with chopped vegetables and I hadnt even added the vegetable broth yet.

If you look at my photo and think that I am missing the sweet potato, I am not. Most of you probably already know this, but I learned something new the day I made this recipe: Sweet potatoes are white and what I have been calling sweet potatoes my whole life are actually garnet yams. They don’t look too different before peeling if you don’t know there’s a difference between the two. I was quite surprised when the sweet potato I had bought was completely white inside!

Difficulty: Medium. Not complicated but a ton of chopping.

Did my toddlers like it? They ate a few of the vegetable chunks out of it but that was it.

Will I make it again? No. I have tried much better soup recipes.

 I also wouldn’t want anyone new to this way of eating to get discouraged by spending a lot of time and effort on recipes that don’t taste amazing, since WFPB food can definitely taste great.
