Recipe Review

This smoothie is hands-down my favourite recipe in the Forks over Knives Cookbook. It is simple, delicious, creamy, cold, sweet, and comforting. I make it for breakfast, dessert, or any time I am craving something sweet like chocolate or a candy bar. This chunky monkey smoothie really helps me keep on track and is a treat that the whole family loves.

The banana, peanut butter, and chocolate flavours really work well together in this easy to make smoothie. The only thing you have to do for prep is to freeze bananas ahead of time. To do this, you peel bananas, break them in half or thirds, pop them into a freezer safe container or bag, then thow in the freezer. Frozen bananas make all smoothies nice and creamy and are great for making nice cream (banana ice cream) so I keep frozen bananas on hand at all times.

Freezing bananas for smoothies is also a great way to make sure you don’t waste any food if you don’t eat as many bananas as you expected in a given week or if they ripen quicker than you anticipated. Of course, if you are a mom or dad, they you likely know the struggle of the kids eating three bananas a day until you buy five bunches of them so you don’t run out. Then they decide they suddenly don’t like bananas anymore. Or maybe that’s just my kids . . .

Update: Eight years after this recipe review, this is one of the regulars in my house. All five kids love it and I even throw in a handful of spinach when we make it.

 I also wouldn’t want anyone new to this way of eating to get discouraged by spending a lot of time and effort on recipes that don’t taste amazing, since WFPB food can definitely taste great. I apologise about the lack of a recipe included but I cannot post it for copyright reasons. However, many of their recipes can be found on their website or their app if you don’t have the cookbook.
