Recipe Review

If you have read the review for the breakfast scramble recipe that is also from the Forks over Knives Cookbook, then you would already know that I did not particularly like it and that I thought it was not worth the effort. That being said, the breakfast rancheros are just the breakfast scramble in tortillas with an added tomato and jalapeno sauce you have to make. So if you liked that recipe then you will likely enjoy this one too. In my opinion, the sauce added spiciness without adding much flavor.  However, eating the breakfast scramble wrapped in a tortilla was more enjoyable and filling than eating the “scramble” by itself.

If I were you I would rather stick to fruit and oatmeal for breakfast or maybe find a recipe for a good tofu scramble.

This post is part of the Forks Over Knives Cookbook Project, an effort to post pictures and reviews of all 300+ recipes to help you decide which recipe is worth cooking. The cookbook only has a few photos so hopefully people find it helpful to see what the recipes look like once prepared.

 I also wouldn’t want anyone new to this way of eating to get discouraged by spending a lot of time and effort on recipes that don’t taste amazing, since WFPB food can definitely taste great. I apologise about the lack of a recipe included but I cannot post it for copyright reasons. However, many of their recipes can be found on their website or their app if you don’t have the cookbook.
