Recipe Review

The peanut noodles with broccoli were a nice change of pace from the usual pasta dishes I have been making from this cookbook. The sauce was quick to make and combined mainly the creamy nutty flavor of peanut butter with the sweetness of maple syrup, the salty umami flavor of soy sauce and the zing of fresh ginger and red pepper flakes.

I like how the broccoli is added to the pot with the noodles as the boil near the end of their cooking time. I love any steps that save time by cutting down on the number of dishes used to create a recipe.

This was my first time using peanut butter in a savoury dish so I was sceptical at first but I absolutely loved how it turned out. The peanut butter made a really creamy and tasty sauce without any dairy needed. Overall, I thought the Peanut Noodles with Broccoli recipe was well balanced for both nutrition and flavor and my kids really enjoyed it.

 I also wouldn’t want anyone new to this way of eating to get discouraged by spending a lot of time and effort on recipes that don’t taste amazing, since WFPB food can definitely taste great.
