This week is the beginning of Great Lent for us Orthodox Christians so my whole family will be eating vegan for the next seven weeks (Yay!). This gives me a great opportunity to cook large vegan meals for my family of eight.

I am starting with the cookbook: One-Pot Vegetarian Easy Veggie Meals in Just One Pot!

Even though this cookbook isn’t exclusively vegan, it has a huge plant based section. There are only a handful of recipes that include cheese and only one recipe that I noticed with an optional egg.

I picked this book up at a Tesco, just past the checkout at a small book sale/ donation bookshelf. The suggested donation was only a pound per book so it perfectly fits into this websites other focus of being frugal. As an added bonus all the recipes are made with only one pot! This is great for me because I am pregnant and very tired so I look forward to simple vegan family meals with minimal clean-up and less dishes to wash.
