Giant vegan pancake! What’s not to love? This Banana and Blueberry Pancake from the One-Pot Vegetarian cookbook includes fruits, protein from the silken tofu, whole grains from the wheat flour, and just a small amount of sugar.

Although the cookbook promises the use of only one pot, this recipe also requires a blender, so a bit more dishes but not a big deal. Hint: It’s even less dishes if you cut it up like a pizza and serve it to your family all on one plate for everyone to grab a a slice.

This recipe is great for large vegan families or anybody in a time crunch because you cook it all at once! No more standing over the stove making three batches of a dozen three-inch pancakes, only for them to be cold by the time you get a chance to sit down and eat. This kids were also full after just one slice because of the tofu and because it is a bit thicker than a typical American-style pancake.
