Recipe Review

I liked this polenta pizza recipe much better than the caramelized onion and potato polenta pizza that I reviewed previously. The tomato and the basil make it taste closer to traditional pizza but with the crust having a twist. Now the creamy texture of the pizza was certainly different. It was mushy, as polenta usually is, so you had to eat it with a fork or a spoon.

If I was serving this to guests, I would not call it pizza because the crust isn’t really a crust. It is more of a grain base to a melody of vegetables. Next time I make it, I would bake it in a casserole dish, add more tomatoes, and finish it off with drizzle of reduced balsamic vinegar.

My only other critique is that the ratios are off. There is too much polenta and not enough of the topping. When I made this for the first time, I ate the leftovers in a bowl with extra spaghetti sauce from a jar.

Difficulty: Easy, you just have to make the basic polenta recipe on page 229 first.

Did my toddlers like it? Yes

Will I make it again? I will not make this exact recipe again. However, I have used this experince as inspiration for other dinners, making changes as described above.
