Here is another busy weekday dinner that takes only minutes to cook. Just bake the chicken-free grills and potato letters in the oven, cook the broccoli, stir together the instant gravy with boiling water, and add a simple side salad.

I usually use a regular head of broccoli from Aldi or supermarkets that price match Aldi because of its great price. However, I used tenderstem broccoli this time because it is what I had in my freezer and I try to use up what I have before going shopping again.

Keep an eye out for yellow label reduced stickers on produce next time you are buying groceries! This is a good way to score a variety of produce that might have not ordinarily fit into your budget. You can substitute practically any vegetable in the meal idea.

You can make it less expensive and make it more grown-up by using half a bag of Hearty Food co (Tesco) chips instead of the potato letters. This would bring the cost per serving down to only 33p. However, I like to use the potato letters to make it fun for my five young children.

Cost breakdown:

  • 2 Green Cuisine Chicken-Free Southern Fried Grills 50p (usually £1 but I used a half off rebate from the Shopmium app https://www.shopmium.com/uk/referral/x7i7w8)
  • 1/8 head of lettuce 5p
  • 2 cherry tomatoes 4p
  • 20g Stockwell & co gravy granules 3p
  • Sainsbury’s potato alphabet letters £1.25
  • 450g frozen broccoli 26p

Total: £2.13 for 4 servings, 53p per serving

(£3.13 without rebate, 78p per serving)
