This no prep meal plan idea is very simple but full of flavor. It might seem obvious as a vegan dinner you can throw together last-minute but sometimes it’s helpful to be reminded of which pantry staple combinations can make a filling meal.

Making dinner doesn’t always have to mean spending an hour in the kitchen chopping, sautéing and baking. Jacket potatoes with any sort of filling are often budget friendly and the starch in the potatoes help to keep you feeling full.

Fresh parsley adds a nice bright flavor to contrast the warm and spicy beans. I didn’t include the cost for it in the breakdown because it is optional. Also, many people already have parsley and other herbs growing on their kitchen windowsill or in their garden so they are free to use. Fresh herbs are a great way to add flavor and elevate an otherwise simple meal without adding any cost.
