Here is another super simple vegan budget diner idea. Packed with nutrients from plenty of vegetables and beans, any Bol power pot works as a healthy, quick, complete meal when served over any cooked grain. 

For this meal, I used the Piri Piri sweet potato and coconut power pot served over rice and garnished with fresh cilantro. It was quite filling and full of flavor. This Peri Piri Bol power pot has a medium spiciness level and is too spicy for some of my children. My children who are sensitive to spicy foods prefer the Creamy Coconut Turmeric Daal power pot. 

This time, I added a vegetable stock cube to the water when cooking the rice. Doing this imparts a nice flavour since I cook my rice using a no-drain method. It is an easy way to spice up your dish and just add some variety, especially if you tend to eat rice often like I do. For variety you could also swap out other grains but rice tends to be the least expensive.
